Thai food is delicious, at least the Americanized version that I am familiar with. It might not be the healthiest for you. There's a lot of carbs and saturated fat. The dishes are often sweetened with added sugar. But if you are as active as Gaby Mueller, you need plenty of calorie-dense fuel.
